This healthy kale smoothie makes my inner yoga-instructor-east-coast-WASP-mom smile. Loaded with fresh kale, citrus, creamy banana and coconut yogurt, as well as spicy ginger root, this über nutritious and delicious green smoothie can help you obtain a good portion of the vital minerals and nutrients that you need everyday for optimal health.
Kale Smoothie Ingredient List
- 1 – 2 banana(s)
- 1 orange + zest
- 1/2 – 1 whole lemon (rind included)
- 1 tablespoon ginger root
- 1/2 cup unsweetened coconut yogurt
- 2 – 3 packed cups of fresh & organic kale
- 1 1/4 cups unsweetened plant-based milk
- 1/4 cup water
Types of Plant-Based “Dairy”
This is really the only thing that separates a vegan smoothie from a non-vegan smoothie: the plant-based milk and yogurt.
It’s quite easy nowadays to find alternatives to milk and yogurt that are equally as scrumptious and creamy as more traditional dairy options.
For this kale smoothie, I tend to use unsweetened soy milk and unsweetened coconut yogurt.
Soy milk is very smooth, and has a thicker texture that I prefer to other plant-based milks. Also, it tends to be high in protein and often fortified with vitamin D and B vitamins, too. That said, if you’re not a fan of soy (*gasps in soy boy*) then feel free to use the plethora of other plant-based milks that you have at your disposal: rice, cashew, hemp, almond, etc.
Coconut yogurt is very creamy and rich, and also often has a decent amount of calcium per serving as well. Cashew yogurt is also very good, and it’s a decent alternative to coconut yogurt.
Is Lemon Rind Edible?
As far as I know, lemon rind is edible, and it’s actually quite good in a smoothie. In fact, the rind is the part of the fruit that contains the most nutrients, and so you reap the most benefit if you include it in this kale smoothie.
With that said, make sure if you’re going to use the rind of the lemon that you buy organic lemons, if possible. Also, wash the outside of the lemons well before blending them up.
If you do plan on adding a whole lemon, consider adding 2 bananas to this kale smoothie as well. This will offset the sourness and bitterness of the rind, and you’ll be pleasantly surprised by how delicious the bitterness of the lemon rind can be when balanced well.

Ingredients
- 1 – 2 banana(s) (peeled), use 2 bananas for a sweeter smoothie
- 1 orange (peeled), plus some orange zest
- ½ – 1 whole lemon, rind included (if it's organic)
- 1 tablespoon roughly chopped ginger root
- ½ cup unsweetened coconut yogurt, (125ml)
- 2 – 3 cups packed fresh and organic kale, de-stemmed (500 – 750g)
- 1 ¼ cups unsweetened plant-based milk, soy or oat is my preference (300ml)
- ¼ cup water, optional – for thinner smoothie (60ml)
Instructions
- Blend everything together in a blender. Drink right away or pop into the fridge for later.
