Banana bread was easily one of my favorite things to make as a kid, and not much has changed since then! This vegan peanut butter banana bread recipe pays homage to classic banana bread but with a peanut butter twist – an excellent snack for both kiddos and adults alike.
Good banana bread should be very simple to make, have light and fluffy interior, and taste amazingly banana-y, of course. This bread has it all: quite simple, superbly fluffy, and very banana-centric.
So if you have any bruised, brown, and overly ripe bananas loafing about in stray fruit bowls, put them to use by making this vegan peanut butter banana bread.
The King of Rock n’ Roll & Peanut Butter and Banana
This particular combination of peanut butter and banana is an allusion to Elvis Presley’s peculiar palate. Famously, one of his favorite foods was a fried peanut butter and banana sandwich. I’ll spare you from frying a peanut butter and banana sandwich in butter (although it could be good), but I wouldn’t dare stop you from slathering vegan butter over a slice of this beautiful vegan peanut butter banana bread!
In this banana bread recipe, peanut butter is a great substitute for the other more traditional processed oils like coconut or canola oil. It lends the bread some unctuousness and a subtle peanut flavor.
I would recommend using a creamy peanut butter instead of crunchy, as well as a peanut butter that doesn’t have too many added ingredients, like molasses.
Coating the 9×5
Lightly grease the 9×5 bread dish with a little bit of vegan butter, and then powder it with a bit of sugar. Spread the sugar around by tilting the dish this way and that.
This technique will ensure that the vegan peanut butter banana bread doesn’t stick in the pan after it’s done baking, and it will also give the bread a crispy, sweet halo around the outside walls.
Don’t overmix!
Lastly, I wanted to highlight the importance of not overmixing the batter of this vegan peanut butter banana bread once you combine the wet and dry ingredients.
Overmixing will lead to a denser bread, and therefore a tougher texture overall.
Gently fold all the ingredients together with a spatula until there are no clumps of flour left.
Vegan Peanut Butter Banana Bread for All!
In short, this is a wonderful banana bread for all types: kids, adults, vegans and non-vegans. Basically, anyone with a mouth who isn’t allergic or intolerant to gluten (sorry, gluten-challenged. I will make a gluten-free bread soon!)
In summation, this bread is (dare I say the word) moist (sorry), as well as packed with banana-flavor, which peanut butter compliments quite well.
I would highly recommend that you give this bake a try, especially if you’re looking for an easy baked goodie that you can eat over the course of a couple days.
Store the bread in an air-tight bag at room temp, and it can last quite awhile without drying out, since the bananas lend it so much moisture.

Peanut Butter Banana Bread
Equipment
- 9×5 bread dish
- Oven
Ingredients
Dry Ingredients
- 2 ¼ cups all-purpose flour
- 3 teaspoons baking powder
- ⅔ cup brown sugar
- ¾ teaspoon salt
Wet Ingredients
- 1 cup ripe bananas, mashed well with a fork (about 2 – 3 very ripe bananas)
- ½ cup smooth peanut butter
- ¾ cup soy milk
- 1 tablespoon ground flaxseed
- 1 tablespoon olive oil, optional (for browning in oven)
For coating the 9×5
- Vegan butter
- 1 tablespoon or so of sugar
Instructions
- Preheat the oven to 350°F, and grease a 9×5 baking dish with vegan butter and coat with a lining of sugar (about 1 tablespoon).
- Add the flour, baking powder, brown sugar and salt to a large mixing bowl.
- On a plate mash 2 – 3 very ripe bananas with a fork – the more ripe, the better. You need about 1 cup of mashed banana.
- In a separate bowl, combine the mashed ripe banana, smooth peanut butter, soy milk, ground flaxseed, and optional olive oil. Whisk well, until everything is smooth. Add this mixture to the dry ingredients, and fold just until everything is incorporated – careful not to overmix it!
- Add the mixture to the sugared 9×5 baking dish, making sure it is evenly distributed. Then bake for 52 – 55 minutes, or until a toothpick inserted comes out cleanly.
- Let cool for 15 minutes, then pop it out of the 9×5. Let the bread cool for another 30 minutes before eating.
