Hot chocolate is the perfect thing to warm you up when it’s cold outside – hot chocolate scones, that is. There’s nothing quite like freshly baked goodies to liven your spirit while also permeating pleasant aromas throughout your entire home. This simple scone recipe can and will do just that for you.
Chocolatey, slightly spicy and with a hint of peppermint, this particular baked good is hot chocolate manifest. They’re relatively easy to make and have a habit of suspiciously and rapidly disappearing from the places they’re set to cool.
You have an option to use vegan marshmallows instead of chocolate chips (or both?!). These are somewhat difficult to find. Occasionally, Trader Joe’s will have bags of peppermint flavored marshmallows that you could then cut into smaller pieces and incorporate in the scones instead. Marshmallows in particular are a more emphatic nod to hot chocolate, so do it if you can find them.
Overall, if you’re craving a cup of hot chocolate but also a baked good, or if you want to share the holiday spirit with your friends or coworkers or whomever, then give these vegan scones a try!
Ingredients
2 cups all purpose flour
2 teaspoons baking powder
1/4 cup cocoa powder
1/8 teaspoon cayenne pepper
1/2 teaspoon salt
1/2 cup coconut oil, chilled
3/4 cup chocolate oat, soy or almond milk
1/2 cup sugar
1/4 teaspoon peppermint extract
1/3 cup vegan chocolate chips or small vegan marshmallows
Directions
1. Preheat the oven to 425 degrees Fahrenheit.
2. Sift the flour, baking powder, cocoa powder, cayenne and salt together in a large mixing bowl.
3. In a separate bowl, combine the chocolate plant-based milk along with the sugar and peppermint extract.
4. Using a fork or pastry cutter, cut in the cold coconut oil into the dry ingredients, until a fine pebbly texture and no large lumps of oil remain. Make a well in the center of that, and pour in the wet ingredients, along with the chocolate chips or small vegan marshmallows. Fold in the ingredients until everything is incorporated. The dough will be sticky – careful not to overmix it.
5. On a prepared baking sheet (lined with a silicon baking sheet or parchment paper), pop the dough onto it and fashion it into an 8-inch circle, then divide the circle evenly into 8 triangles. Don’t separate them too much to begin with.
6. Bake the scones for 13 to 14 minutes, and then remove them from the oven, separate them all the way, and bake for an additional 3 to 4 minutes.
Let cool for 5 minutes, and then enjoy!
