Peanut Butter & Brown Rice Syrup
The most important part of this recipe is the binding agents – peanut butter and brown rice syrup.
When combined in a sauce pan over low-medium heat, the two meld together into a sweet goop that’s a great binder for these rice crispy treats.
Be sure to use creamy peanut butter for this recipe, as we’ll have enough chunkiness in the bars already with the chocolate chips and pepitas.
Chocolate Chips
Also paramount for these rice crispy treats with peanut butter and chocolate is the chocolate chips, of course.
Since we’ll be pouring the hot peanut butter and brown rice syrup over the puffed cereal, raw pepitas and chocolate, the chips will inevitably melt, and thus create the obviously chocolatey squares that you see here.
Therefore, it’s recommended to use a mini chocolate chips like Enjoy Life Chocolate Chips, in order to melt more easily when you pour the binder over the rest of the ingredients.
These particular mini chocolate chips by Enjoy Life melt really well. And better yet, the ones that aren’t melted still contribute with little bursts of chocolate here and there as you bite into the bars.

Chocolate Pepita Puffed Rice Treats
Equipment
- 8×8 baking dish
- Parchment or wax paper
Ingredients
- 3 cups puffed rice cereal
- ¾ cup raw pepitas, also known as pumpkin seeds
- ¾ cup semi-sweet non-dairy chocolate chips
- ¼ teaspoon salt
- 6 tablespoons creamy natural peanut butter
- 3 tablespoons brown rice syrup
- ⅛ teaspoon vanilla extract
Instructions
- Add the rice cereal, raw pepitas, chocolate chips and salt to a large mixing bowl. Roughly combine these together.
- In small sauce pan over low-medium heat, melt together the creamy peanut butter and brown rice syrup until the two are well combined, whisking occasionally. Once the two are fully melted together, remove the pan from the heat, and then whisk in the vanilla. Let this cool for about 1 – 2 minutes.
- After it's slightly cooled, add the peanut butter-brown rice mixture to the large bowl with the other ingredients, and fold everything together with a hefty spoon or spatula (preferably something metal and strong), until all the cereal is sticking together, and most of the chocolate chips have melted.
- Pour the sticky cereal mixture into an 8×8 baking dish lined with parchment or wax paper. Press the cereal down until it is very compact. Then, pop the baking dish into the freezer for 10 – 15 minutes, until cool and the chocolate has congealed and set in place. Once cooled, remove the treat by lifting the parchment/wax paper from the baking dish, and then cut the large rice crispy treat square into 9 separate squares.
