Quick-Cook Rolled Oats – Why They’re Great!

Make Your Own Oat Flour!
One way to transform rolled oats is to grind them down into a relatively fine powder to make an oat flour – something that you’re going to need to do for this recipe.
Oat flour is hearty and stalwart with a distinctly astringent oat-y taste (of course), and this kind of flour works really well as a substitute or partial substitute for wheat flour. How To Make These Easy Vegan Oatmeal Pancakes
1. Make the Flour
These pancakes also make use of a quick and easy DIY oat flour. Simply take 1 1/2 cups quick-cook rolled oats, and grind them in a processor or small grinder to make the flour.
If you don’t have access to this kind of grinding appliance, you may have the option to purchase a bag of oat flour, as well. However, if the bag of oat flour is not derived from quick-cook oats, it may cook differently.
2. Let It Rest
Once ground up, combine the fine oat flour with the rest of the ingredients to make a batter. Let the batter sit for a 5 – 10 minutes, so that the baking powder has sufficient time to do its thing.

Simple Oatmeal Pancakes
Equipment
- Skillet
- Mixing Bowl
Ingredients
- 1½ cups oat flour, quick cook rolled oats, processed/blended finely into powder
- 3 teaspoons baking powder
- ¼ teaspoon salt, or to taste
- 1 ½ tablespoons brown sugar
- 1 cup soy milk
- 1½ tablespoons ground flaxseed
- A couple tablespoons vegan butter, for frying and garnish
- Maple or agave syrup, for garnish
Instructions
- Combine the oat flour, baking powder, salt and brown sugar in a large mixing bowl (make oat flour by processing rolled oats (quick-cook works best) into a fine powder).
- Next, combine the soy milk and ground flaxseed in a microwaveable bowl. Stir, and then microwave for 30 seconds.
- When that's done, combine the soy milk mixture with the dry ingredients. Mix until no dry flour remains. Let the batter sit for a good 5 – 10 minutes.
- Heat a skillet over medium heat, and cook medium-sized pancakes (about as big as your spatula or slightly bigger) for about 2-3 minutes on each side, until the edges are crispy and the pancake is golden brown. Note: You can add a little more milk to help shape the batter into pancake shapes if the batter itself is too thick, and a little more oat flour if the batter is too thin.

Delicious and nutritious. I found these especially good since I’m on a restricted diet, and oats are one of the whole grains I can have. Being able to make pancakes (gluten free) was a real treat for me. Just a little vegan butter and maple syrup and a cup of hot coffee. Perfect.
